Pork contains a high level of collagen, which has a high skin-beautifying effect. In particular, tebichi (pig’s feet) has long been valued in Okinawa as a nutritional source for its richness of gelatin. We slowly stewed the pig’s feet with bones and all until it gets tender, and its plump texture is a secret of deliciousness. The soup is very healthy as it also contains radishes and kelps. You can adjust the intensity of the flavor as you like with miso (paste) included separately.

Nakamijiru is one of the typical Ryukyu dishes for celebrations and feasts. It is a much elaborated dish as prepared and cooked all ingredients of pig’s small and large intestines and stomach for a long time to make them melty softened. The soup is mild and delicious, seasoning lightly with konjac and shiitake mushrooms.

Rafute with burdock(165g)✖️1
Pork belly and burdock stewed in Okinawa-style. Pork belly and high-fiber burdock provide an excellent balance of health. The flavor of the burdock matches well with the tender braised pork and can be enjoyed as a side dish.
The miso-based soup with plenty of ingredients is indispensable for celebratory dishes at home. It was made with wild boar meat in the past, but later on with pork. Since those meats are similar, we call this dish Inamuduchi which means Inoshishi-modoki (wild boar meat-like) in Okinawan dialect. It is stewed with shredded pork, shiitake mushroom, konjac, etc. You can add the attached miso (paste) as per your taste.
